It’s always rosé season. We distilled the base spirit for this pink gin from Oregon wine, then infused it with botanicals inspired by the flavors of our favorite rosés: fresh berries, hibiscus, peach, orange peel, and lavender. Dry, fruity, and festive, it makes G&Ts special and takes French 75s to an entirely new level.

Vaettir Aquavit
The Vættir are the supernatural entities of Norse mythology, encompassing everything from tiny house spirits to enormous giants. Vættir Aquavit pays tribute to the mysterious ways of the old gods with a beguiling combination of botanical flavors like star anise, caraway, fennel, and citrus peel.
Astrid Vodka
Ingredients matter—especially for vodka. A delicate flavor means there’s nowhere to hide. That’s why we chose French wheat as the base for our Astrid Vodka. It’s quadruple-distilled, giving it a rich texture, subtle sweetness, and incredibly clean finish. We bottle this at a slightly higher proof, which makes cocktails sing.

Cold Brew Bourbon
One bottle. Two great flavors. We proofed our signature heated bourbon down to bottling strength with Junior’s Roasted Coffee cold brew instead of water for this delicious spirit. Think of it as Irish ingenuity meeds Pacific Northwest cafe culture. Mellow, toasty, and dry, Aimsir Cold Brew Coffee Bourbon is amazing neat, or as a cocktail building block, shining in Irish coffees, Old Fashioned, or beer cocktails.
Straight Bourbon Whiskey
Our Straight Bourbon Whiskey is a 4 year old, wheated blend. After winning a Double Gold from San Francisco World Spirits Competition in 2022; this delicious Aimsir Bourbon is flying off the shelves. It is only available in 750mL size and by allocation.
A mellow, easy-going bourbon for laid-back gatherings. We personally selected the casks for this small batch blend of wheated bourbons to highlight soft, approachable flavors. Aromatic vanilla, sweet caramel, and just a touch of spicy white pepper ale this bottle an easy choice for casual backyard sipping, dinner party cocktail mixing, and everything in between. The Aimsir Straight Bourbon Whiskey is so smooth, you might be shocked to see it’s 94.5 Proof.

We finished our award winning bourbon in a stout barrel for an extra 7 months to give this robust flavorful spirt some extra depth.
